It's Girl Scout cookie time and my old-standby Girl Scouts are (I guess) too "old" for scouting. Samoas are one of my all-time favorites, and this time of year I get a tiny bit of a craving. I saw a "healthy" version of this recipe in a magazine lately and thought I'd give it a try – but using more delicious, not-as-healthy ingredients. (Honestly, it's a coconut, caramel and chocolate cookie. If you're going to eat it, at least make it worth it!)
Recipe: Samoas Girl Scout Cookies
Ingredients
12 short-bread cookies (I used Keebler® Fudge Stripe™ cookies)
1/2 cup sweetened coconut
12 caramels
1/4 milk
1/4 cup chocolate chips
Directions
Toast the coconut by heating your oven to 300˚F. On a cookie sheet covered with parchment paper, toast the coconut by baking for 15 minutes, stirring the coconut every five minutes. Let cool.
Melt the caramel in a small saucepan by combining the caramels and milk. Stirring constantly, heat until smooth and creamy (about 10 minutes). Once the caramel is smooth, stir in the toasted coconut.
Melt the chocolate chips by heating it in a double-boiler, or in the microwave, stirring every 20 seconds or so. (Be careful! Chocolate burns really easily in the microwave!) Once melted, pour the chocolate into a sandwich bag.
Ok...time to build the cookies. Place the short-bread cookies on your parchment-lined cookie sheet. Spread a tablespoon of the caramel/coconut mixture onto each of the cookies. Cut a tiny hole in the sandwich bag and squeeze the chocolate out, drizzling over the cookies. Now, allow them to cool completely.
If you're like me, keep them in the fridge so they're extra chewy. Yum!

confused bug
Last week Josie found a "pet". The fuzzy creature (named "Fluffy") is probably so confused. Between 45˚ February days, followed by 20˚ ice storms, and now permanent residence in a stick and lettuce filled bug box in our house, I'm sure he doesn't know what's going on. He's getting lots, and lots of attention though.
Oh...and Josie "trained" him to do tricks – if she puts him on a pencil he'll hang from the end.
Poor little guy.

sparkle shoes
Ellie and Josie have to have school shoes specifically for "indoors". The last two pairs that Ellie wore were cute (not cheap) Mary-Janes by Simple. The first pair lasted the second half of last year and into the summer, then the strap broke. I bought her another pair for this year. Last weekend the strap broke in the same place.
Josie's shoes, on the other hand (or foot), are brown Mary-Janes from Target. They were 1/3 the price of the Simple shoes. Josie's shoes are in perfect condition.
I went shopping for replacement "indoor" shoes for Eleanor. This time, I'm getting how the universe works...
Expensive shoes that look great = they won't last through Kindergarten
Inexpensive shoes that are the most obnoxious style you can find = she'll be wearing them into First grade.

tough – but done!
Amy and I both read online that the half marathon yesterday started at 10:00AM. We stayed the night at my in-laws in Mt. Pleasant, were up and out the door by 9:00AM. When we arrived at the starting line at 9:10AM, we were informed (NOT nicely) by two awful women, that "300 other people managed to get here on time!" and we wouldn't be allowed to run the race. Thankfully, a kind gentleman told us to put our chips on our shoes anyway, and run the race with our watches keeping our correct time. Despite the discouraging comments from others at the start, we did just that, starting the race 22 minutes behind everyone else.
Amy and I don't usually run together, but she stuck by my side for the entire race. (Amy...you are the BEST sole-sister anyone could ever ask for!) The first 1-1/2 miles were on pavement, the rest of the race was on ice-covered dirt roads. Miles 7–11 were through open fields with 20MPH winds at our faces. It was brutal. Every ounce of energy that I was counting on to carry me through was spent keeping our feet from sliding out from under us, and fighting the winds that were pushing us backward.
Despite the 20 minute late start, the bad road conditions, and the winds, we finished in 2:25. A lot slower than either of us had anticipated, but we finished!
So...the big question. Will I do it again? Yes. I'm running the Lakestrides 1/2 in Ludington on June 9th. Plus, it can only get better from here, right?

13.1
Today I'm running my first half-marathon. 13.1 miles in the snow.
I'm nervous. My longest run pre-knee was 12 miles. My longest run post-knee is 10. I know I can run this (maybe not gracefully), but I can, and will, do it.
Around 10 miles I'll remind myself that my family is waiting for me at the finish.

reprieve
Wednesday was a day that teased of spring. After school, Josie and I had "swinging" lessons. She asked me to show her how to pump. In her exact words "Mommy, can you example for me?"
I hopped on the other swing and pumped until I was as high as the swing would go. (Fun and nauseating at the same time.) Josie stood a few feet a way, and with furrowed brow, watched my every move.
A few attempts of her own, and she's well on her way to swinging like a big girl when spring arrives for real.

We had a wonderful time in Houston last weekend with Uncle Chris, Aunt Amy, Allison and Grandpa Kirker. A few hightlights...

another anniversary
Sometimes I wonder how Kyle and I manage to keep it together with both of us self-employed. This past week has been a total blurr (and yes...it's only Wednesday!). We are leaving in the morning to visit Kyle's brother Chris, Aunt Amy and little Allison in Houston, TX. Kyle and I are both neck deep in major work projects and are scrambling to get projects to a point that they can be left at until we return Monday. I might be packing bags at midnight tonight, but it will all come together. It always does.
Anyway, back to the "anniversary". Sunday will four years since I started this happy little blog. Kind of amazing, and heart-warming. Amazing that I've been faithfully writing 5-7 times a week. Heart-warming when I think of all that I've shared and worked through the past four years – with your help. The comments I've gotten from all of you mean the world to me.
For the next five days I'm going to share some random photos that I've pulled from the archives. Some you might have seen before, but most of them I don't remember ever sharing. Enjoy, and I'll be back Tuesday with family pictures from TX!

a very happy anniversary
Today is the 2-year anniversary of my knee mishap. Yes...we'll call it that.
Last year at this time I was still having regular bi-weekly therapy appointments and was another month from even thinking about running.
Yesterday I ran ten miles, took an ice bath, and thought about how far I've come.
In 12 days I'll run my first half marathon.

build-a-bear
A few weeks ago, Eleanor chose a trip to Build-A-Bear Workshop as her reward for keeping her temper and emotions in check. (I'll post more about this later in the week, it's been a collaborative effort between Ellie, me, and a game-changing parenting book from 1964. Sue...I owe you one!) Tuesday, Ellie earned the reward, and the rest of the week we'd been building up to the Saturday trip to the mall – the BIG mall. The one that takes a good hour (1 hour and 20 minutes in a snowstorm) to get to, in the Suburban since the weather was so bad, at $3.80/gallon for gas, in a vehicle that gets about 12 miles per each of those almost $4 gallons. This trip...was a BIG DEAL.
Wednesday night I visited the mall website. I reminded myself where Build-A-Bear was, even printed out a coupon for $5 off our purchase.
Saturday morning we were dressed and ready to go a little after 9:00am, drove the many slippery and snowy miles to arrive at 11:00am on the dot. The excitement was palpable!
Into the mall we go, potty break first then beeline for Build-A-Bear Workshop! As I get closer to the store's noted location, all I see is a big, black, painted plywood enclosure. No sign. No nothin'. **Deep breath** I calmly walk the girls over to the mall map. Yes...that's where Build-A-Bear is. At this point Ellie and Josie are asking questions. We found a bench and pulled out my phone to consult the mall website. Once it comes up I go immediately to the store's page. I even call the phone number. A lovely recording tells me that they are open at 10:00am, along with a bunch of cheerful nonsense about birthday parties and directions to the store. They fail to mention that THE STINKING STORE IS GONE!
Long story short, we went directly to the Guest Services office. They swore the website says the store is closed for remodeling until spring. I quickly prove otherwise, shaking with so much frustration that I can barely hold my phone. Where as I was seconds away from bursting into tears, Ellie and Josie held it together. They were sad of course, but no tears, no tantrums. We walked back to the bench and talked about our options – think of something else that would be special, or wait until spring and come back. Josie was all for waiting until Ellie spotted a Pillow Pets kiosk a few yards away. (Apparently my kids are all about the over-commercialized stuffed animals.) They've both been asking for a "mini" Pillow Pet for months, but we didn't think it was necessary to have two sizes of the same toy, but yesterday changed all that.
So...two Pillow Pets, a ride on the carousel, and dessert with lunch, and my two little girls came home with smiles on their faces.
