Ooey-Gooey Cream Cheese Brownies


Here is a recipe that I've been making for about 10 years. It's rich, not too sweet and fairly easy to make. Perfect for the coming weekend!

Ooey-Gooey Cream Cheese Brownies

For Cheesecake
4 oz. neufchatel cream cheese
1/3 c. sugar
1 tbls. flour
1/2 tsp. vanilla extract
1 egg white

For Brownies
1 oz. semisweet chocolate
3 tbls. butter
2/3 c. flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1 egg
1 egg white
1 c. sugar
1/2 c. unsweetened cocoa powder
1 tbls. water
1 tsp. vanilla extract

Directions
Preheat oven to 350˚. Beat together cheesecake ingredients: cream cheese, sugar, flour, vanilla and egg white in a large bowl. Set aside. Coat the bottom of an 8x8 baking pan with non-stick cooking spray. In a double boiler, (or in microwave) melt together the semisweet chocolate and butter. In a separate bowl, sift flour, baking powder and baking soda. In a large bowl, beat egg, egg white, sugar, cocoa powder, melted chocolate mixture, water and vanilla; add flour mixture and beat until blended. Spread two-thirds of the chocolate batter in the pan, the pour cheesecake filling over the top. Drop the remaining chocolate batter on top, smearing around a bit with your fingers to spread evenly, letting the cream cheese mixture show through in a marble pattern. Bake for 30-40 minutes or until the center is done. Cool completely before cutting into 12 squares. (For those who care: 150 calories/5 grams fat per square.)
