recipe: shrimp lo mein
I've been trying to add one new recipe each week to our "regulars". There have been a few that we won't make again, and a few, like this one, that we'll probably be making again sooner than later. This Shrimp Lo Mein, ripped from Real Simple, is delicious (and easy)! I did make a slight change from the original recipe – we added the snow peas later since we like them to retain a little crunch.
Ingredients
8 oz. lo mein noodles
2 tablespoons canola oil
1 lb. peeled, deveined shrimp
1/2 lb. snow peas
4 thinly sliced scallions (white and green parts separated)
2 cloves chopped garlic
1/4 cup oyster sauce
2 tablespoons rice vinegar
1 tablespoon soy sauce
Kosher salt
crushed red peppers
Directions
Cook the noodles according to the package directions.
Meanwhile, heat the oil in a large skillet over high heat. Add the shrimp, scallion whites, garlic and 1/2 teaspoon of salt. Cook, tossing occasionally, until the shrimp are cooked through, 2 to 3 minutes.
Add the oyster sauce, vinegar, soy sauce, 1/4 water and snow peas; cook, tossing, until thickened, 1 to 2 minutes. Add the noodles and toss to combine. Serve sprinkled with the red pepper flakes and scallion greens.

ReplyDeleteI like the idea of adding a new recipe once a week, keeps you from getting bored and allows you to weed out recipes you have been keeping that really are not worth it.
