WEDNESDAY - Microwave Caramel Corn
Recipe from my friend, Nicole Schwarz
Ingredients
1/2 cup popcorn kernels, air popped
1 cup brown sugar
1 stick butter
1/4 teaspoon salt
1/4 cup corn syrup
1/2 teaspoon baking soda
1/2 teaspoon vanilla
1 brown paper grocery bag
Directions
Place the popcorn in a brown paper grocery bag.
Combine the brown sugar, butter, salt and corn syrup in a large saucepan. Bring to a boil (about 2 minutes). Cook on high for another 2 minutes. Remove from heat and add baking soda and vanilla. Pour over popcorn in bag, close and shake.
Place bag in microwave and cook for 1 minute. Remove and shake. Place back in microwave and cook for another minute. (Watch carefully and do not overcook.) Remove from microwave and cut the top from the bag. Spread the caramel corn onto waxed paper and cool.
I like to give caramel corn as gifts. I pour some into a storage bag, tie with a string, then place the bag inside a small gift bag. My brothers have come to look forward to this each year!
