Peach Cobbler.

Always searching for the "best" recipe (ie: Chocolate Chip Cookies, Pancakes), Peach Cobbler has been at the top of my list for years. My friend Sarah's mom made the best cobblers – biscuit topping, not too sweet. I've tried many of the self-rising flour recipes, the ones where the peaches rise to the top. Not what I'm looking for. (Good...but not perfect.)

Well, I've finally found it. Delicious. Peachy. Not too sweet. Moist, biscuit topping. Give it a try!

This is a "mini" cobbler – 1/2 the recipe.

Peach Cobbler

Ingredients
4 cups, pealed, pitted peaches
4 teaspoons cornstarch
1 tablespoon brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup flour
4 teaspoons white sugar
1 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons cold butter
1 egg white
1/3 cup milk
1 tablespoon white sugar

Directions
Preheat the oven to 375˚F.

Place peaches, cornstarch, brown sugar, cinnamon and nutmeg in the bottom of a 8"x8" baking dish. Toss to combine.

In a large bowl, combine flour, sugar, baking powder and salt. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs.

Whisk together the milk and the egg white. Slowly add this to the flour mixture and mix until a dough forms. Dump this dough onto a lightly floured surface, shape into a 6" log. Cut the log into equal 1/2" think biscuits.

Place biscuits on  top of peach mixture. Sprinkle with the remaining tablespoon of sugar.

Bake for 40 minutes, or until the biscuits are golden and the peaches are bubbling. Yum.
