Recipe: Banana Pudding


What to do with old, brown bananas? (If you were my friend Kirk, you'd wait to eat them until they looked like leopard tails. Yuck!) Anyway, around here it's smoothies and banana bread. Then I remembered one of my favorite desserts as a child. Banana pudding. It's really vanilla pudding with bananas and vanilla wafers. No matter what it's called, it's delicious!

Banana Pudding

Ingredients
2 old, yucky bananas
1 small box of vanilla pudding (I prefer the type you cook, but instant works too.)
16 vanilla wafers
Whipped cream

Directions
Prepare the pudding according to box instructions. Set out 4 dessert dishes. Place three vanilla wafers at the bottom of each bowl. Slice one of the bananas evenly into the bowls, placing the slices on top of the wafers. Pour the pudding into the four bowls. Allow the desserts to cool.

Before serving, top with whipped cream, a few more wafers and the other banana, sliced. Enjoy!
