SATURDAY - Coconut Bon-Bons (my absolute FAVORITE Christmas "goody"!)
Recipe from my mother, Pam Payne (if you haven't noticed, my mom can rock the goody tray!)
Ingredients
32 oz. powdered sugar (less 1/4 to 1/2 cup)
1 can sweetened condensed milk
1 stick butter
2 cups shredded coconut
pinch of salt
3 cups chopped pecans
24 oz. semi sweet chocolate chips
2/3 bar bakers wax
Directions
Melt the butter, stir in the milk. Once combined add all but 1/2 cup of the powdered sugar, coconut, salt and pecans. (You may need to mix this with your hands.) Add more powdered sugar if it feels too sticky, you want it to be sticky enough to roll into balls, but not so sticky that it sticks to your hands. Once it's the right consistency, chill for one hour.
In a double-boiler, melt the chocolate chips and wax.
Roll the coconut mixture into 1" balls. Place a ball on a toothpick and dip into the chocolate mixture. Place on a tray lined with waxed paper and chill for 10 minutes in the freezer. Pack the bon-bons in an airtight container. Try not to eat them all before you've given them to your friends and loved ones. (Or give them to people you'd like to have as friends!)
