RECIPE: Homemade Granola Bars



Homemade Granola Bars
Easy and pretty darned healthy too!

Ingredients
14 oz. can sweetened, condensed milk
2-1/2 cups rolled oats
1 cup shredded coconut
1 cup dried fruit (raisins, cherries, cranberries)
1/2 cup seeds (sunflower, sesame, pumpkin)
1/2 cup nuts (pecans, almonds, walnuts)
1/4 cup flaxseed

Directions
Preheat oven to 200˚ and line a 9"x13" pan with parchment paper. Warm the condensed milk in the microwave for 1 minute. Meanwhile, mix all the other ingredients together. Slowly stir in the condensed milk. Use a rubber spatula to fully incorporate the milk, and then press the mixture into the bottom of the parchment covered pan. Bake for 1 hour. Allow to cool for 15 minutes, then cut into 16 bars. Store for up to 2 weeks in an airtight container. Great for breakfast, lunch boxes and snacks!

  2. Love these! I remember making them just before Anna was born...they were a perfect midnight nursing snack.I haven't made them in a while, though...will have to soon.

  3. Oh girl, you must've been reading my mind. I've been wanting to know how to make these...they're too expensive to buy the way my kids eat them! Question though, do these turn out crunchy or chewy?

  4. They are chewy. But, they're not going to be like Quaker since the oats are so much denser than the stuff in the store-bought ones. You can make them crunchy by spreading thinly into two 9x13 vs one.

    The nicest part is that they are so flexible as far as tastes go! Let me know how they turn out!
