I mentioned this recipe a few weeks ago. It's simple and delicious. (And good enough to serve to company!)
RECIPE: Shrimp Pasta
Ingredients
1 lb. penne (or another short pasta)
1 lb. shelled shrimp
2 tablespoons olive oil
2 tablespoons butter
1 small onion, diced
2 cloves garlic, chopped
8 oz. marinara sauce (a great place to use leftover sauce)
1/2 cup beer (or chicken stock)
1 cup heavy whipping cream
parsley
salt and pepper
red pepper flakes - optional
Parmesan cheese
Directions
Cook pasta according to box directions. Set aside. Divide the shrimp into two piles. Purée half and chop the other half. Heat the oil and butter in a large sauté pan, add the onion and garlic. When these are soft, add the puréed shrimp and the marinara sauce. Stir well, then add the chopped shrimp and the beer (or chicken stock). When the beer has cooked down, add the cream and chopped parsley. Season with salt and pepper. For a little heat, add a few red pepper flakes. Dump the drained pasta into the sauce and stir to coat. Serve with Parmesan cheese.

ReplyDeleteI was waiting for this and here it is, thank you. I am going to try this minus a few things but my gosh does this look good. I have followed your recipes in the past and from what i see you can cook, awesome. Have you ever been a prep cook anywhere?
